Default Settings for Files App

I was using he files app that came with the tablet. Was reading PDF and mobi files and clicked "use this as the default" when I was reading a PDF document. Now, when I click on a mobi file, it just says can't open file. Like it is using Adobe to try to open the mobi file.

How do I get back to the default settings or be able to adjust them?

Go to Settings -> apps
Find the app in question (adobe in this case)
Scroll down and you will see a clear default button if any are set
