Is it possible to access the internet via my HTC Wildfire phone with the Archos 101 Internet Tablet? I seem to be able to pair but not connect via bluetooth. If so how?

You need to use your phone as a modem, then set your tab up to pick the wireless connection up.
On your phone go to settings-wireless and networks then click portable Wi-Fi hotspot settings, set a password for you to use then your phone is ready, on your tab just set it to pick up your phone modem, use your password to link up.

Keep in mind that you will be paying extra to do this, unless your phone is rooted. (Ask on XDA or google it)

Not tried via blue tooth but with the wildfire s it works well if you create a wi-fi hot spot as already said,it can cost more to surf this way or you may not be allowed to with your phone contract, ime on the three "one plan" tethering is allowed on this and contrary to popular belief there are no data limits on this plan with the exception of peer to peer file sharing or commercial use.
