Yes you can't, however you can switch back from 2.1.04 to 2.0.10, but not below 2.0.10 so no (not yet) hackable firmware.
Just copy the firmware 2.0.10 in the root of your archos and click it in the filebrowser of your archos it will then start the up/downgrade.

You have to register your product there at archos, put all you do is go to the site for one and look.
go to support, see download within the support box and go from there, find your model and make and that will get you started.

is 2.0.10 more stable than the latest firmware? I've found that with the latest firmware the Archos freezes all the time. this gets very annoying ...when I was djing a party and it kept freezing when I was adding songs to a playlist while playing music.
